Gault&Millau Paris Île-de-France Tour 2026: The Winners
Orangerie d’Auteuil, September 7, 2026. Eleven distinguished winners and Jean-Baptiste Lavergne-Morazzani named Gault&Millau d’Or for La Table du 11 in Versailles.
The culinary scene of the Île-de-France region gathered at the Orangerie d’Auteuil in Paris on Monday, September 7, 2026. Sixteen partners, three cooking demonstrations, a brand-new talk show, a series of awards, and, at 12:30 p.m., the announcement of the 2027 Gault&Millau d’Or. A look back at a ceremony hosted by patron Jean-François Piège, chef at Le Grand Restaurant (5 toques), and culminating in the recognition of Jean-Baptiste Lavergne-Morazzani in Versailles.

The talk show brought together Marc Esquerré, director of the Guide and Surveys, and Jean-François Piège, who also heads up La Poule au Pot (2 toques). This new discussion format allowed industry professionals and the press to ask questions about how Gault&Millau operates.
Eloquence Award
Presented by patron Jean-François Piège, this trophy honors the talent of a front-of-house professional. Three candidates were in the running: Evan Abadie (Airelles Château de Versailles), Ama Ben Meriem (Plénitude, Cheval Blanc Paris), and Aurélien Malle (Pierre Gagnaire).

Young Talent Award: Jihyun Kim, Ébène in Paris
Trained at the Institut Paul Bocuse and having worked at Septime, Jihyun Kim joinedL’Arpège in 2018 and spent six years there alongsideAlain Passard. It was there that she met Simon Plantrou, who was then working in the dining room: the couple opened Ébène (2 toques) in September 2025 on Rue Falguière, with support from the Gault&Millau Young Talent Grant. A minimalist, plant-forward cuisine. Award presented by Freddy Guillemot of Rougié.

Seafood, Lakes, and Rivers Cuisine Award: Manogeran Shasitharan, Mantra in Paris
Originally from Malaysia, Manogeran Shasitharan has turned Mantra (3 toques), on Rue Rodier in the 9th arrondissement, into a haven for a traveling and rebellious Franco-Malaysian cuisine. After earning critical acclaim on the English Channel coast in Mers-les-Bains, the chef settled in Paris with his partner Jonathan Caron, taking over the space formerly occupied by Condesa. The menu features a three-course scallop tasting and a lobster confit with sambal. The award was presented by Marc Bancal of Kingfish and Raphaël Balay of Kaviari.

Pastry Chef Award: David Boudinet, Maison Rostang in Paris
Although he was drawn to the kitchen during his training years, David Boudinet quickly discovered a passion for desserts. After training at Régis Marcon ’s restaurant in Saint-Bonnet-le-Froid, he has been working since 2023 at Maison Rostang (3 toques) in the 17th arrondissement, where his desserts—such as the pear, almond, and rose geranium, bring a beautiful harmony to Nicolas Beaumann’s cuisine. The trophy was presented by Vincent Chassagne of Jura and Delphine Schmit of Debic.

Technical Excellence Award: Thomas Boullault, L’Arôme in Paris
Starting his first job at age 12, followed by a stint in Switzerland, then at the Royal Monceau beginning in 2003 alongside Christophe Pelé: Thomas Boullault honed his skills in the kitchens of luxury hotels. When the hotel closed for renovations in 2007, he took the reins at L’Arôme (3 toques), which he purchased in 2019. An award honoring nearly twenty years at the helm of the restaurant, presented by Bérenger Martinel of Jinchan Foods.

“Tradition of Today” Award: Jean-Claude Cahagnet, Auberge des Saints-Pères in Aulnay-sous-Bois
After working as a chef in Meudon and then in Dampierre-en-Yvelines, Jean-Claude Cahagnet openedthe Auberge des Saints-Pères (2 toques) in Aulnay-sous-Bois in 1997. His career spans more than forty years, the result of a chance career path. In a modern dining room with a yellow ceiling, he now offers a predominantly modern cuisine based on high-quality ingredients, presented in three options: a customer’s choice, a chef’s selection, or a tasting menu. The trophy was presented by Rodolphe Provencal of Pacojet and Alain Indria d’Olhive.

Exceptional Terroir Trophy: Rémi Chambard, Le Corot - Les Étangs de Corot in Ville-d’Avray
Trained at renowned establishments, from the Grand-Hôtel du Cap-Ferrat to Les Sources de Caudalie in Martillac—where he met Nicolas Masse— Rémi Chambard was entrusted with the kitchens of the Les Étangs de Corot hotel in 2012. The fine-dining restaurant, renamed Le Corot (3 toques), features a decidedly rustic cuisine that is 100% from the Île-de-France region: watercress from Essonne, asparagus and leeks from Argenteuil, spinach from Viroflay—not to mention honey from his own hives on Île Monsieur in Sèvres. Award presented by Jean-Marie Ollivier of Maison Guénard.

Sommelier Award: Gaëtan Lacoste, Le Gabriel - La Réserve Paris in Paris
Born above his family’s restaurant in the Basque Country, Gaëtan Lacoste has climbed the ranks, fromthe Hôtel du Palais in Biarritz to Lasserre and then to the Clarence, before joining Le Gabriel - La Réserve Paris in 2021. As the restaurant’s head sommelier, he also oversees the MRH Group’s wine program alongside Jérôme Banctel, managing a first-rate wine cellar that includes all the great vintages. The award was presented by Antony de Roquefeuil of Moët & Chandon and Merlin Reignier of Château Patache d’Aux.

Hospitality Award: Céline Pavard, L’Auberge de la Brie in Couilly-Pont-aux-Dames
In 1991, Céline Pavard welcomed her first guests to her restaurant. Thirty-five years later, L’Auberge de la Brie (2 toques) remains one of the finest restaurants in Seine-et-Marne. In a relaxing setting opening onto a flower-filled garden, the cuisine is delicate and colorful, the wine list spans all regions, and the hostess ensures impeccable hospitality. Award presented by Arnaud Poilleaux of Lightspeed.

Young Talent in Service Award: Martin Saulais, La Truffière in Paris
Trained as an apprentice at La Truffière beginning in 2018, Martin Saulais, born in Paris in 2001, continued his career in Dublin and then in Paris before returning in 2024 to manage the dining room at this Parisian restaurant renowned for its extensive wine cellar. He is now seeking a new challenge. The award was presented by Chloé Bouquin of Smartbox.

Grand de Demain Award: Jason Gouzy, Pantagruel in Paris
Opened in 2019 with his partner, Pantagruel (3 toques) moved last year from Rue du Sentier to Rue de Richelieu—a leap in scale that Jason Gouzy fully embraces: “We’ve shifted gears and expanded our scope.” As the owner-chef, he champions a style of cooking where every element on the plate must be meaningful—and in the process, he’s earned a third toque. The trophy was presented by Juliette Champion of Robur.

Gault&Millau d’Or 2027: Jean-Baptiste Lavergne-Morazzani, La Table du 11 in Versailles
Flavien Dumont of Charvet, alongside Philippe Laruelle of De Buyer, presented the award to Jean-Baptiste Lavergne-Morazzani, chef at La Table du 11 in Versailles, which holds 3 toques and a score of 16/20. Recognized for his talent at the age of 24, he opened the restaurant in February 2015 with his father. “It was a great family project, and I never imagined we’d be where we are today twelve years later,” he says, acknowledging the loyalty of his teams, including his manager, who has been with him for ten years, and his sous chef Mathieu, who has been by his side for nine years.
His cuisine has also become more confident: the chef says he is now “much less anxious about our culinary approach ”—a sense of calm that, in his view, “shows on the plate.”
