Chef's Restaurant Of course, we're very fond of all the good times Jean-Claude Cahagnet brought to this inn, in an environment that was hardly conducive to the blossoming of auteur cuisine. Today, with the passage of time and a shortage of staff, the owner is refocusing on a simpler cuisine in which he still injects a few hints of personality, with beet-hibiscus kvas poured over Tarbouriech oysters, hake minestrone, marinated Buddha hand, vadouvan and rocket-coriander condiment, coconut milk caramelized with rum, caliente chocolate, banana and orange, alongside, for connoisseurs, matured meats. Relaxed, precise service, varied cellar.
