Chef : 2 restaurantsThe son of restaurateurs, Jean-Baptiste Lavergne-Morazzani is no stranger to the subject, and didn't hesitate long before turning to training in the kitchen. " My parents ran La Maison des Bois in Plaisir, near Paris, an authentic thatched-roof inn that has been in the family for almost a century. My uncle runs it now, so it's the 4th generation."
But Jean-Baptiste wanted to write his own story, in the city, in a more modern establishment. He spent four years training at the Ferrandi school in Paris, from BEP to Bac Pro. "I learned the basics of the trade at Gordon Ramsay's Trianon in Versailles. I stayed with this great team for four years."After a stint with Yannick Alléno at Le Meurice, he went on to work at Cobéa, with Philippe Bélissent, where he learned about management and the dining room, all of which he felt were essential to setting up his own business.
He did just that in 2015, when he opened La Table du 11 in Versailles. "I've taken this lucky number, which follows me, and applied it to my three addresses, La Table, Le Bistrot and, most recently, La Cave du 11, a wine bar next to the gastro."With his instinctive, plant-based cuisine, the 2016 Jeune Talent de l'Année won 2 toques straight away, then 3 toques in 2019. Jean-Baptiste Lavergne-Morazzani wasn't even 30 when Gault&Millau named him Grand de Demain 2020. Ambitious, he sets no limits: he's aiming for 5 toques.
