He's a bit like the unsung king of Versailles. If local history is populated by great names, Jean-Baptiste Lavergne-Morazzani has certainly made his mark on local gastronomic life over the last ten years. And true connoisseurs are not mistaken, as they flock to this elegant, uncluttered dining room with its intimate atmosphere. The grand menu is a great attraction, but if you're lucky enough to drop in for lunch, the four-course lunchtime menu for €80 provides a fine introduction and an excellent return, with the creations of the moment: marinated langoustine, vinegared rice and agastache, pollack, cooked at low temperature and zucchinis, roast poultry with spinach and pea emulsion before the seasonal marriage of strawberry and rubarb, vanilla and shiso. An extensive wine list, with a fine selection of wines from the Champagne region and Corsica, where the chef has family ties.
