Gault&Millau's review 2025

Opened in 1928, this legendary hotel regained its prestige in 2010 after several years of restoration spearheaded by Philippe Starck, who preserved the spirit of the place (its stained-glass windows and original staircase) while infusing it with an arty modernity through a private screening room, a contemporary art gallery, a bookstore, and a collection of 300 works of art scattered throughout the property, including the 149 luxurious rooms and suites. The 1,500 m² Raffles Spa & Wellness (one of the largest in Paris) features a 23-meter pool, a hammam, a sauna, and treatment rooms offering a wide range of exceptional treatments by Dr. Barbara Sturm, 111Skin, and Nooance. The final highlight is contemporary, cosmopolitan dining at Matsuhisa Paris, the prestigious restaurant of Japanese chef Nobu—whose kitchens are overseen daily by Executive Chef Emanuele Bombardier—and Il Carpaccio, which celebrates transalpine cuisine prepared by Oliver Piras and Alessandra Del Favero.
