A 100% Chardonnay blend from plots of old vines (some 110 years old), made with a majority of Cramant Grand Cru, complemented by Chouilly Grand Cru, not forgetting a touch of Cuis 1er Cru for the Gimonnet signature and style. The nose is complex, with aromas of dried mushrooms, morels, dried fruit, citrus, medlar jelly and unroasted coffee beans. An astonishingly attractive texture, with good volume on the palate. The bubbles are fine and rather discreet, letting the wine express itself above all else. Mineral finish, perfect for roasted turbot with hollandaise sauce.
