This 2007 needs plenty of oxygen to open up, so decanting may be useful. Right from the nose, complex, evolved, nuanced and evolving, you know you're dealing with a great wine. Gentian, ripe nectarine, mirabelle plum, green curry... the aromas combine and harmonize. On the palate, the wine is fine, lively, with saline tension rather than fullness. Very 2007 in spirit, it offers crystal-clear, crisp bubbles. Magnificently balanced, this great champagne is a classic match for veal sweetbreads or raw fish.
