This is "the" great 1990 of our tasting! It was disgorged in 2007 after 17 years in the cellar, and kept 12 years after disgorging. It boasts a superb, bright, clear color, with millimeter-perfect bubbles. On the nose, aromas mingle happily: butter, rusk, brioche, fresh lemon, preserved lemon, orangette, particularly fine oxidation, fresh clove... the evolution never stops. On the palate, the structure is incisive on entry, then opens out with infinite complexity. This immense wine of great distinction combines everything you could wish for in a great champagne. To be discovered and savored on its own or with a pearly sea bass with Sicilian lemon essence.
