A single plot of pure Pinot Noir d'Aÿ is used for this champagne, which boasts a beautiful, pronounced, brilliant color. In a whirlwind of flavors, the wine shows rare complexity, at once very fresh and powerful. The time it takes to open modifies it every second, leading to root notes (gentian, turmeric), a "veil" of yellow fruit, hints of cinnamon cake and freshly cut herbs. The length is magnificent, with flavors of quince, mineral acids and a fine touch of red fruit that astonishes, delights and then delights when combined with notes reminiscent of yellow chartreuse. Superb!
