Placed under the sign of precocity, this 2007 reveals itself as a year for ageing. The bottle tasted was disgorged in June 2016 after nine years' ageing. In the glass, the lively effervescence forms a discreet cordon. The subtle nose overflows with fragrances of coulis Mara des bois strawberry, bitter orange zest, followed by floral touches of orchid and peony, complemented by hints of gray pepper. On the palate, a vinous profile is supported by suave, delicate fruitiness. Of exceptional quality, the wine is dosed like an extra-brut. A superb bottle. Ideal with crayfish fricassee, duck foie gras with almonds and mace, or seven-hour lamb.
