This is an original cuvée in which we find the boldness of 100% pinot noir from the first press. A light dosage of 4.5 g/l lends this extra brut a fine balance. The powerful nose of peach and Bergeron apricot underscores a hint of raspberry pastry. The palate reveals a subtle, invigorating, creamy mouthfeel of white truffle, underpinned by a beguiling minerality. This is a champagne for connoisseurs, best enjoyed as an aperitif, with Gillardeau oysters or a scallop and samphire nage.
