After their investigations, each expert assigns a score to the restaurant visited, between 1 and 5 toques and between 0 and 20 out of 20.
A score between 10 and 10.5 is associated with original tables, whose cuisine is simple, traditional or contemporary, but sincere.
Between 11 and 12.5, tables gourmandes offer a solid classic base, good techniques and a good choice of products and cooking methods.
Next, chef's tables with a score between 13 and 14.5 offer irreproachable products cooked by a versatile chef who not only has a very good technique, but can also afford variations on traditional or contemporary cuisine.
Outstanding tables hold 3 toques and a rating between 15 and 16.5. This rating underlines excellence in execution, where technique and simplicity go hand in hand, to offer the cuisine of a committed chef with his or her own signature.
A 4-toque rating means a prestigious table with a score of between 17 and 18.5. An author's cuisine of exceptional products, where the chef's personality and the emotion of tastes and flavors are mastered.
Finally, a restaurant rated between 19 and 19.5 is an exceptional table. The whole is memorable, unique, simply perfect.
