Cruising speed achieved without taking out the umbrella, under the Burgundy sun. Everything's going well for this young, committed restaurant, with its focus on young winemakers' cellars, and its witty dishes, well prepared by Chern Hwei Gan, an Indonesian from Borneo who has worked at Mère Brazier. The offer is impressive from lunch onwards, with a two- to five-course menu from €27 to €44: haddock white beans peas chilli, spelt trout zucchini turmeric, magret potato fennel, tiramisu, never banal or disappointing. Two tasting menus at €58 and €78 for the evening, with the same sober, cutting-edge philosophy.
