Gault&Millau's review 2025

A symbol of Dijon's heritage, this address has contributed to the city's vitality since the end of the 19th century, attracting prestigious guests to discover the riches of the former capital of the Duchy of Burgundy. Now part of the MGallery collection (part of the Accor group), the hotel has been revamped by Studio ADN, and offers guests 88 luxurious rooms and suites with contemporary decor and works of art. The restaurant room, orchestrated by young chef Aurélien Mauny, takes up these elegant codes that combine gray and eggplant, but the most successful space remains unquestionably the bar with its white stone counter, its ceiling decorated by graffiti artists and the presence of a DJ on weekends that attracts all the city's youth. The Vinésime and Biologique Recherche spa is nestled in the basement of a vaulted cellar, with sauna, hammam, swimming pool and treatment rooms. Another nugget is the delightful interior garden, bucolic and serene. A place not to be missed, Dijon's only 5-star hotel.
