Gourmet Restaurant A venerable 16th-century house in the heart of Dijon, housing a 4* hostellerie and a gourmet restaurant designed by Philippe Le Bon. The establishment plays on its historic charms to stage a luxurious, bourgeois experience, perfectly designed to host grand dinners and special occasions. The plates follow the current with enough presence, a perfect egg with mushroom cream, bread tuile and candied turnips, a pollack, a variety of radishes in three textures and chimichurri sauce, a rabbit with Closerie mustard, melting apples, grilled eryngiis and morel sauce, a jelly with Burgundy crémant, regional strawberries, Swiss meringue and strawberry sengana sorbet.
