Gault&Millau's review 2025

Lovers of Burgundy (and its gastronomy) swear by this address led by chef William Frachot, who revisits Burgundy's heritage with talent. Less well known, however, is the fact that it also houses an ultra-comfortable hotel with some 30 rooms and suites decorated in a contemporary style, as well as a spa nestled in a former vaulted cellar with hammam, sauna and treatment rooms offering ultra-relaxing hot stone massages. Nestled in a former coaching inn, the hotel is the perfect base for visiting Dijon's old town (a UNESCO World Heritage site), starting with Sainte-Bénigne Cathedral, a Gothic masterpiece just a stone's throw away.
