Gault&Millau's review2026
Mertensia opened a few months ago in the heart of Lyon's 6th arrondissement, replacing the restaurant Le Passe Temps. The decor is pure and minimalist, a subtle blend of Scandinavian and Japanese styles. The cellar is still present at the heart of the restaurant, adorning the space. The cuisine is authentic and committed. There are no à la carte dishes, but two menu proposals, the first vegetarian, the second featuring seafood. Chef Falvien, formerly second chef at the Culina Hortus restaurant, offers a gastronomic cuisine that's plant-based, uncluttered and yet very gourmet, as in his dessert based on rice and its different textures. A cuisine open to the world, with surprising combinations like the Merken sorbet accompanied by strawberries in port wine.
