The ideas are often renewed, to follow new desires: beef tataki with miso, celeriac marinated in Sophie Joncy's walnut vinegar and beet cream, fish according to arrival, pak choï cabbage, seasonal vegetables and curry sauce, guinea fowl supreme, truffled mashed potatoes, Jerusalem artichoke, mushrooms and meat jus, Breton sablé, pear, chestnut cream and pear sorbet.
