Asia enthusiast Morgan de Polignac is at the helm of Mofusan in the heart of the 6ᵉ arrondissement, sharing his interest in the Orient through an all-encompassing Franco-Asian fusion cuisine. In a seven-step menu at €59, unfortunately blind, this winter we tested vegetal starters of hazelnut braised leek for the first and carrots and parsnips on a pumpkin velouté for the second. We then moved on to the proposals that warmed us up a little, with a gourmet pollack on a cream of celery and its many tangy condiments, followed by a tender, gourmet chuck of beef, expertly spiced. The chocolate and smoked tea dessert leaves us on a pleasantly sweet note, enhanced by a pumpkin seed praline. Pairing food and sake, or food and tea, creates a beautiful alchemy between glass and plate.
