Gault&Millau's review 2026

Right next to the Dukes' Palace, this is perhaps the most regular of Loiseau restaurants, with standards well maintained since the Vigilant era, succeeded by Jean-Bruno Gosse, and now Julian Fistos, a young chef of Romanian origin trained in Saulieu with Patrick Bertron. He's no stranger to Loiseau cuisine, so the course is well maintained in this completely redesigned setting, preserving the architecture of this superb townhouse. Plates and sauces are chiseled to perfection, a hallmark that's reflected in the asparagus, grilled and steamed, hollandaise with wild garlic, brill with sorrel, roast lamb with glazed peas and peppermint jus. A good menu at €95, including the à la carte menu, at a justifiably high price (€95), with desserts in the same meticulous style (strawberry compote and fresh cremet d'anjou with lemon balm). Opulent cellar with all the grands crus.
