Gault&Millau's review 2026

Saison has succeeded Betterave in this attractive corner house in a buoyant neighborhood, with a pleasant terrace at the back. Chef Riccardo Maiello, who has worked in some of the world's top establishments (Levernois, George V and Bristol in Paris), now offers a form of continuity, with excellent technique, quality products and fashionable combinations: roast bok choy with spicy mussels and béarnaise emulsion, braised veal ravioli with shiitake spinach and garlic sauce, strawberry and timut rhubarb with ginger and mascarpone cream. An interesting sequence, which already shows a fine personality, close to the two toques.
