This is top-notch, no-nonsense bistro cuisine that's firmly rooted in its terroir, and knows how to pass on tradition without passing on the dust that often comes with it, or getting bogged down in recipes that have been seen everywhere. The vegetable pâté croûte is so professional and well spiced up with horseradish mayo that you forget it's vegetarian, the Dombes chicken meat is such a fine product that the animal looks like it's been trained on an athletics stadium, and the roasted pear, warm Bonnat chocolate mousse, subtly spiced up with cardamom ice cream, closes with gourmandise and lightness. The wine list will satisfy fans of ethical wine, with a few stars (Lassaigne, de Moor, Foulards rouges) and some very natural wines, and above all, with attentive staff able to guide you efficiently.
