With a certain discretion, chef Albéric Colas maintains his position on the famous rue Royale, sailing on the threshold of the two toques, thanks in particular to this ever-balanced menu-card for €49, balancing between classic and innovative backgrounds: smoked salmon royale, apple and celery tartar, beet coulis, walnut crumble; veal onglet, aligotée purée with Saint-Nectaire, full-bodied veal jus; signature seafood risotto; chestnut confit, vin chaud-style blackcurrant coulis.
