Chef's Restaurant After spending seven years with René and Maxime Meilleur at La Bouitte, Laurent Bonnet opened L'Ecume in the heart of the 7ᵉ arrondissement with sommelier Xavier Lamandé, whom he met at Maison Clovis. The duo complement each other perfectly and brilliantly lead this lovely table, which opts for simplicity by offering only "surprise" formulas, always based around market and seasonal produce. The cellar is that of a connoisseur, and offers some fine discoveries, from Julien Courtois and Heidi Kuka's VDF Ancestral to Clos des Nines in Languedoc.
