It's Lyon's most famous canteen, a huge brasserie founded in 1836 by an Alsatian emigrant, with an atmosphere that's as striking as ever. More than seven hundred diners in a magnificent Art Deco room, where the staff in full dress perform a precise choreography, serving Lyonnais and Alsatian classics with professionalism. The menu focuses on the essentials, with platters and plates of seafood and shellfish, onion gratinée with Madeira wine, fillet of sea bass with broad beans and shellfish juice vinaigrette, the famous choucroutes and Lyonnais delicacies: andouillette from the Bobosse house, pistachio sausage from the Sibilia house with Beaujolais sauce, calf's liver with wine vinegar, cauliflower gratin... And of course, Lyonnais pots, or Georges beer, brewed on site!
