Gourmet Restaurant Few restaurants can claim to be as much of an institution as the Brasserie Georges, whose reputation extends beyond France's borders. Founded in 1836 by an Alsatian émigré, the brasserie's vocation has always been to welcome travelers, those arriving by stagecoach and then by train at Perrache station, and to introduce them to the capital of gastronomy. It's a very special experience, with over seven hundred covers served every day in a huge Art Deco room, where the waiters follow a choreographed routine, delivering both Lyonnais and Alsatian classics, in homage to the founder. The execution is pretty basic, but that's not all you come for: the festive atmosphere, the applause on birthdays, the speedy service. On the menu: green lentil salad from Le Puy, pike quenelle with tarragon, spinach and shellfish coulis, creamy cabbage. To accompany, a pot of white or red wine, or the house beer.
