A Relais&Châteaux with a noble style that has been perfectly preserved, a top-class restaurant entrusted to chef Thomas Braghi. The scene is elegant, the plates carefully presented and the bill haughty for a cuisine worthy of two fine toques: a canaille association between Crisenon trout and black pudding, Patrice Sanchez's pigeon served rosé with a blueberry ketchup cacao miso and beet, the pastry chef's impeccable soufflé with Morvan cazette and Burgundy ratafia. The "Balade en Côte-d'Or" menu at €89 is the best choice, to live the moment as a châtelain of a privileged evening, with all the right attentions.
