Gault&Millau's review 2025

Located in the heart of the old town, this luxurious hotel is housed in the former mansion of the Jadot family (famous wine merchants) and the adjoining Carmelite convent, flanked by a 16th-century cloister. Now owned by Swedish chef Johan Björklund, it offers everything we love… just 17 rooms and suites—spacious, bright, and decorated in a contemporary style with beautiful designer pieces (notably the Florence Knoll suite and its large terrace); two dining venues (HBistrot and the gourmet restaurant Le Bistro) that blend the best of France’s culinary heritage with a few Swedish inspirations. And let’s not forget the American-style bar and its remarkable cocktails, to be savored in a unique speakeasy atmosphere in the heart of Burgundy.
