Gault&Millau's review 2025

Set in 7 hectares of parkland, refreshed by a pond, this 12th-century Cistercian abbey has retained its luminous, serene atmosphere. Beautifully restored by the Cummings family, the site was converted into a hotel in 2005, and now boasts 20 rooms and suites. Divided between the abbey, the former nuns' house and beautiful outbuildings nestling in the park, they all offer the historic charm of four-poster beds and floral tapestries, combined with a few contemporary pieces. A Relais & Châteaux member, the abbey is also home to the Bistrot des Moines and the Le 1131 restaurant, where you can enjoy François Pelletier's exquisite cuisine in a breathtaking setting: a room with ribbed vaults, arches and columns, bathed in the soft light of stained glass windows. Halfway between Beaune and Dijon, a rare address.
