That's what we call a smooth handover. After four years as second-in-command to Laurent Peugeot, Rudy Villien naturally took over when the creator of Le Charlemagne, the man who brought him to this high level, handed over the business to him. With his partner Léa, he is now committed to perpetuating what has been achieved while developing his cuisine. Still Japanese, but always close to the product and the region, it expresses itself in beautiful nested menus, in 4, 5 or 7 courses: asparagus and smoked trout yuzu furikaké, pollack dengaku artichoke couteaux umibodo, filet of duckling with morels sweet onion curry comté and a beautiful strawberry peanut pink and basil charlotte. A large-scale winery, with the village's vineyards naturally taking pride of place.
