The new address was quickly adopted by the people of Auxerre, delighted to have a new bistronomic restaurant in town. The modern concept is led by Julien Bedu, well known from Les Tilleuls in Vincelottes, and Thomas Poirier (Villa Florentine in Lyon). The duo of chefs bring their talents to bear on menus ranging from €24 to €39, featuring white asparagus in a starter with snails, parsley and hazelnuts; lean meats in shrimp, pea and wasabi tartar; smoked green wheat in risotto with green asparagus and scamorza; and lamb shoulder confit with artichoke, lemon and olives. Good pastries by Thomas (grandmother-style chocolate mousse, buckwheat and madeleine, a pain de Gênes, lemon, raspberry and olive oil). Good, exclusively Burgundian wine cellar.
