In the center of the wine village, this Soufflot is an attractive market table, which has put as much effort into its decoration as it has into its dishes. It's a tradition well reproduced in a serious setting, with parquet flooring, old stone and an astonishing plant ceiling, illuminated by a glass roof. To accompany a fine Burgundy cellar of some 200 references, organic eggs en meurette with Irancy ratafia, salmon fillet and sorrel sauce, Gaston Gérard-style poultry ham, celery purée and comté tuile, strawberry and rhubarb fountain.
