The nose is superb. Fresh grapes, as if pressed the day before, set the ball rolling, followed immediately by a mineral and saline rock water character. On the palate, very fine balance and freshness with a refreshing umami aspect that lengthens the wine throughout. As if the wine had matured so slowly that it had retained its youthful prime. Pair with shellfish or a filet mignon of Iberian pork with clams.
