The non-dosed wine in the range is a blend by thirds of the three great Champagne grape varieties. It could also be called Équilibre, for in this bottle, it's so well-crafted. The nose is complex, with just the right amount of fruit and fine toasty notes. The palate is in the same style: perfectly ripe and juicy, salivating and savory. A delight with raw fish.

This family-run business was founded in 1849. Approximately 50% of the grape supply, exclusively Premier and Grand Cru, comes from the 89 hectares of vines grown in-house, spread across the terroirs of the Marne Valley, the Montagne de Reims and the Côte des Blancs. Initially dominated by Pinot Noir, the wines now benefit more from the elegance of Chardonnay. They are superb. Damien Cambres is the current cellar master at this benchmark house.
