Gourmet Restaurant After eighteen years in France, notably at Le Clos des sens in Annecy, Japanese chef Yumika Tokita has joined the gourmet Rue de Sèze, with her bistronomic table where the two countries influence each other. The chef's personality is immediately apparent, with a minimalist, wooded setting, attention to harmonious tones and quality materials, and balanced volumes and spaces that reflect her taste for precision. This Japanese spirit forms the foundation of a revisited French cuisine, revealing a certain sensitivity in presentation as well as in the work of sauces and cooking. Beef tataki comes in a composition of daikon petals and five-spice condiment, grilled onions and olive oil, all in texture and balance, a perfect egg, pumpkin espuma and candied mushroom, with a beautiful trompe-l'œil and a revisited œuf en meurette spirit, a beautiful declension around guinea fowl, green cabbage tartar and fennel sauce. We conclude with a French toast cake, persimmon compote and matcha coulis. To accompany, a well-constructed wine list and a recommended selection of sakes.
