Yumika Tokita continues to bring life to her part of rue de Sèze, which has been severely cut back since the retirement of Bernard Mariller. Her Franco-Japanese table evokes a taste for harmony, well supported by the experience of the chef, who notably passed through the Clos des sens in Annecy. Her €42 menu elegantly switches back and forth between the two countries, with beef tataki, marinated radish strips and five-spice condiment, cod tempura, simmered lentils and Espelette pepper koji emulsion, veal confit, wasabi cauliflower cream, red wine miso sauce, mango yatsuhashi and chocolate ice cream.
