Chef's Restaurant It's a 4* hotel over two hundred years old, a historic house in the heart of Burgundy, run by the Livry-Level family. Committed to the transmission of knowledge and excellence in hospitality, the family maintains a spirit of chateau living and refined luxury, both contemporary and of the past. Chef Éric Balan (formerly 16/20 at La Bastide des Lys) enlivens their gastronomic table with a conscientious and intelligent cuisine, working the region with precision. The €78 menu features foie gras escalope with timut pepper, kiwi juice and verbena emulsion, sauté-roasted veal with Morvan cazette dusting, melting apple, hibiscus beet and purple oxalis, creamy Kalingo, coconut, lime fromage blanc sorbet and coriander gel.
