Chef's Restaurant Sébastien Chambru, a distinguished MOF chef known notably at the Moulin de Mougins, feels right at home in this pleasant Burgundy house in the heart of the Fuissé vineyards. Elegant table and fine manners, in the service as in the plate: marinated fresh anchovies, kasha and snow peas, wild garlic emulsion, Arctic char cooked au naturel, herring emulsion, raw and cooked radishes, herb grémolata, braised beef cheek and raw whiting, marinated turnip veil, red wine jus, strawberries and rhubarb cake-crumble, lemon-glazed ricotta, for a beautiful, complete and attractive €71 menu. The market formula, changed daily, is €41, the cellar boasts 700 references and there are a few treats to take away from the store.
