The biblical character doesn't always hunt in his advertised territory, but nonetheless brings in some fine catches. The house-smoked salmon, accompanied by a wasabi emulsion and wakame seaweed, evokes Nordic and Asian horizons, and seduces with its freshness and balance. Perfectly cooked scallops find depth in a concentrated langoustine bisque, supported by a light, tangy hollandaise and a fine parsnip purée. The dessert, featuring pistachio, coffee and chocolate, confirms the mastery of gourmet pastry-making. The wine list, resolutely Loire-based, gives pride of place to Chinon and Bourgueil wines from leading estates, served with precision.
