The former café at the Ligré train station is now a high-quality, ethically-minded restaurant that showcases seasonal produce from its half-hectare vegetable garden and orchard. Chef Martin Bolaers, trained in Fontevraud, is fully committed to the project and prepares a variety of menus tailored to guests’ preferences and budgets, featuring the freshest harvest of the moment: a “here-and-now” plate straight from the garden and pantry, warm trout in escabèche with rhubarb juice, farm-raised pork “from head to shoulder” with watermelon and eggplant ketchup, buckwheat tartlet with raw cream and fruit from the orchard… Authentic, straightforward, and appetizing in every season, with a well-stocked wine cellar featuring wines from local vintners.
