Former second-in-command to Thibaut Ruggeri at Fontevraud, Martin Bolaers joined the Les Jardiniers team in September 2023, in the heart of the countryside, in this former farmhouse renovated in keeping with the spirit of the region, surrounded by a 5,000 m² vegetable garden. The chef invites us on a journey where plants and local produce are at the heart of the cuisine, the bread is homemade sourdough, and on arrival we choose the bouquet of fresh flowers for our table: the atmosphere is set! Moment T is a starter based on vegetables from the kitchen garden: lacto-fermented beans, imperfect and stained carrots, eggplant sorbet and a fine squash purée on a glazed vinaigrette: these are not, as is often the case, vegetables put there for the vegetarian customer, but a real reflection, with a variety of cooking methods, raw, glazed, lukewarm, that totally respect the product; we're in the same spirit with the troglodytic experience around the mushroom: a shiitake purée on a quinoa cake and a vertical construction with raw, lukewarm, pholiote, powdered egg yolk for color, roasted pumpkin seeds for crunch. The dessert is in the same vein; on a delicate meringue, an ice cream with wild carrot flower seeds under a French toast crumble: a true chef's dessert; the wine list focuses on chinon, the service is friendly and this good moment can be concluded with a visit to the kitchen garden.
