Remarkable Restaurant Ronan Kervarrec's cuisine is technically irreproachable, and his taste is always fresh and light. In his contemporary home on the outskirts of Rennes, decorated with an acute sense of elegance and comfort, he revives and shares his childhood memories of Brittany. The first delicacies already make sense and provide a fitting introduction to the rest of the meal, just as the final sweets leave a lasting impression. In the meantime, the superb langoustines carved into thick carpaccio are a superb summer starter, with notes of chervil, a sea fennel sorbet and a creamy "bisque de têtes", complemented by an addictive seaweed brioche bun. A marine and vegetal universe that you won't want to leave thanks to the delicate Pénestin cockles combined with trout roe, a beurre blanc marinière and a few spaghetti-shaped seaweeds. This is followed by a remarkably well-cooked sweetbread and a thin slice of veal strawberry with a hint of mustard and licorice. A dense, well-balanced veal jus adds the finishing touch. Singularly well-suited to the season, the dessert is not grandiloquent, but its apparent simplicity testifies to the precision of its work: strawberries from the "plein champ", candied and in sorbet, accompanied by a rosemary creaminess, not forgetting a crunchy dimension. Under the guidance of Els Kervarrec, the chef's wife, service is smiling and attentive. As for the wine list, which is available on the shelves, it includes some impressive references, as well as other, still high-quality, but slightly more affordable wines: Saint Chinian from domaine de la Madura, Côtes Catalanes from domaine Gauby, Loire wines from Vincent Pinard, domaine Delaporte or domaine Vacheron... And let's not forget the lovely garden, where tables are laid in fine weather.
