It's the archetypal postcard inn on the edge of a small town... traditional architecture and the Vilaine River flowing at its feet. It's peaceful and charming. The comfort, elegance and brightness of the dining room add to the pleasure of leaving the hustle and bustle of Rennes for this restaurant, which the Guillemot couple have elevated to the rank of institution. The menu perfectly expresses the idea of authentic, understandable and fluid cuisine. Wise too. On this particular day, Sylvain's favorite cockles were delicately combined with candied leek, ginger, obione and cooking juices. Clean and precise! Freshness is guaranteed with this spider meat on a finely crumbly pastry that blends perfectly with the peas. This iodized page is turned to make way for a variation on a lamb of irreproachable quality, served as a leg, rack, breast... a little piece of liver even makes an appearance. Seasonal vegetables and a herb salad complete this dish with its southern accents and the controlled presence of a hint of harissa. Dessert is in "classic" mode, with a strawberry-rhubarb alliance that's always a winner, all the more so since a very light mousse with minty notes and a sorbet twisted with rose geranium are also on the menu. The service is charming, and the loyal Isabelle Jumel puts all her communicative energy into suggesting the best food and wine pairings.
