Benjamin Jourdren rises to the challenge of offering modern gourmet cuisine in keeping with the understated luxury of Rennes' only 5* hotel. The elegant dining room, which opens onto a flower-filled patio, is not stuffy, with parquet flooring, Scandinavian lines and white tablecloths, and the chef's cuisine is meticulous and precise. The soft-boiled egg from Ferme de la Ploutière comes with a textured celery, the pollack is very well cooked, at a low temperature, accompanied by cauliflower, citrus fruit and lemongrass foam, a beautiful lamb with Roscoff onions and chocolate jus, a crispy wafer, Alpaco 66% chocolate ganache and cardamom ice cream. Well-balanced cellar with great references and more affordable bottles. Menus from €52 to €78.
