Prestige Restaurant Is perfume an art? Undoubtedly, especially when combined with cuisine! Christophe Roure may have been a "nose" in another life... his aromatic, diabolically precise cuisine is reminiscent of the finest "jus". Olfactory collections, that never leave us from beginning to end with great subtlety. The menus, and the à la carte menu too, allow you - with no pressure - to get off the beaten track, to experience only what you've chosen... a dream come true! We start with appetizers, which have their place. From salty to tangy, from spicy to bitter... they prepare us for the dishes that are currently simmering. I'll remember for a long time this little sardine soufflé, so light it'll make me sick. Then the escargots petit-gris and potato gnocchi, drizzled with Grenoble-style hazelnut butter. And a touch of Comté cheese adds an extra touch of deliciousness. The flesh of kiwi crab, avocado and cucumber meets an evanescent verbena foam, and it's bluffing. As for the dishes, we're already familiar with the very Instagrammable Arctic char cooked in front of you in beeswax - it's visual. Let's stop for a moment to consider this shellfish and shiitake stew, flavored with lemongrass. A hollandaise assembled in a siphon plunges us into a deliciously tangy sorrel-lemongrass flavor. The tone is set. The cockles entwine in a fiery kiss with shiitake. We know the song. But these little coconut beans, rougher, more rustic, give a different aspect. As a final farewell to the end of summer, capers give us a glimpse of those last rays of sunshine, sharp and a little acidic. As for desserts: chocolate pear Neapolitan cake with summer sorbet, or a rustic (yet elegant) matefaim with figs and almond sorbet. The wine list can be intimidating... but fear not, there's something for every budget. An excellent time here in a restaurant that's only getting better. The service could follow the same trajectory, with confidence and an extra dash of modernity.
