Remarkable Restaurant Gaétan Gentil has always taken risks, and assumed them. When he moved his Prairial to the Confluence area, he wasn't quite sure he'd be able to bring his clientele to the far end of the peninsula. After a few weeks, the response was positive. And we, for our part, were won over by the new architecture, the new design by Johany Sapet, the open kitchen that puts everyone in the thick of the action, and the dishes - still on the hidden menu, alas, but very much in line with the theme of nature and discovery, with lots of plants, using top-quality produce treated with great skill: an interesting play of textures on kohlrabi with lemon balm and fish roe, pike with fermented carrot and fir-tree oil with a marked acidity, magnificent Arctic char matured for eight days, squash and tansy, perfectly cooked venison, beet and fig leaf before two fine desserts, clementine tagetes and citron to cleanse the palate, and meadowsweet squash seeds with raw milk for sweetness. Céline, the chef's companion, is an integral part of the success of the moment, lending her expertise to the 900 references in the cellar.
