Remarkable Restaurant The chef is generous and likes to add a little extra. If you choose the four-course menu, you'll receive just about double the amount, which means you'll get a good taste of the cuisine that won Matthieu Girardon three toques last year. This year, he has confirmed this with the fine technical skills of a mature chef. He has found his signature in the recurrence of touches of acidity on deep, comforting tastes, and lightly fruity flavors, enabling him to stand out slightly without upsetting customers. Accomplished dishes are sure to please: pan-fried foie gras with corn, cream and balsamic cream espuma, pearly arctic char, beet purée, marinated fish roe, beet emulsion and jus, a well-balanced dish without overturning the table, before an excellent citrus dessert, fromage blanc mousse with a citrus heart, almond shortbread with Greek yogurt ice cream under a citrus espuma with wild pepper. The cellar is logically oriented towards Burgundy, with a fine selection of independent winemakers, many of them very good: Perrot Minot, Georges Roumier, Arnoux-Lachaux (Vosne Romanée 2016 390€), Noellat, Trapet, Mortet, Rousseau (Clos de la Roche 2016 at 590€), at relatively fair prices, but without many small pins. Well-trained, customer-focused service, discreet and smiling.
