It was one of our favorites of our 2006 edition, published at the end of 2005: we discovered a 35-year-old chef, installed in the former train station of Saint-Just-Saint-Rambert, a few kilometers from Saint-Etienne.
The rails were still there, as was the old platform clock, and in this decor that was both historic and contemporary, the cuisine of the former student of Pierre Gagnaire, Régis Marcon and Paul Bocuse had dazzled us with its dazzling vision and personality. A title of Grand of Tomorrow was the logical reward for the future MOF 2007.
At the beginning of 2014, aware with his wife Nathalie that the site would probably prevent them from growing and lasting, the man who had started out at the mythical Poularde, in Montrond-les-Bains, decided to leave the Loire and set up shop in the heart of Lyon, but, funnily enough, not far from the old Brotteaux train station.
After a timid start, this chef with his obvious technical background and know-how quickly found his stride, succeeding in creating a rich gastronomic experience without being stuffy, enhanced by friendly service.
