Chef's Restaurant Just around the bend in a leafy lane, Hotel La Vague de Saint Paul is a serene refuge just a few minutes from the bustling town of Saint-Paul-de-Vence and the cultural Fondation Maeght. It's in this setting that, for the past six years, chef Akhara Chay has been cultivating a sensitive cuisine inspired by Asia and the Mediterranean in his Jardin de la Vague. Enjoy a wellness interlude on the terrace or in the vast dining room, resolutely turned towards art, for an informal lunch based on the €35 daily menu: langoustine ceviche with citrus vinegar and puffed rice, veal tsukune (meatballs lacquered in a Japanese barbecue over wok-fried soba noodles), or a simple, low-sugar dessert: cheesecake with siphon and a few red fruits. You can also ask the chef for an exclusive carte blanche, or experience total immersion in his world by eating at his table in the kitchen. All this is accompanied by the wines wisely recommended by the sommelier, and we let ourselves be carried away by a service of rare benevolence.
