Gault&Millau's review 2025

On display in the lobby, photographs taken in the 1980s by American photographer Slim Aarons show that this dream location has remained unchanged for four decades. Clinging to the hillside of Vence, it reveals a breathtaking landscape, embracing the entire coastline from Saint-Tropez to Menton, with the village of Saint-Paul-de-Vence below. Built on the foundations of a former 12th-century Templar commandery, the building has retained its chapel, but also boasts a contemporary spirit, with 40 rooms and suites and 6 private villas that rival each other in charm and refinement (Pierre Frey or Canova fabrics...). The gastronomic restaurant Le Saint-Martin, where Jean-Luc Lefrançois officiates, extends into the oenothèque, a delightful lounge where you can taste precious vintage bottles. And for more natural and sporty pleasures, head for the poolside or the tennis courts, before taking a wellness break at the La Prairie spa, entirely dedicated to the rebirth of body and spirit...
