Remarkable Restaurant He is one of the great masters of Côte d'Azur cuisine, which he has personalized throughout his career, from the Negresco to his chic hilltop hideaway overlooking the neighboring hills and Saint-Paul. Alain Llorca is above all a man of taste, who knows better than anyone how to express Mediterranean aromas and flavors in an almost instinctive way, even if his dishes are highly crafted, often using prestigious products: zucchini flower poupeton with black truffle and mushroom butter, Mediterranean sea bass in eggplant crust, fillet of beef poached in seawater with French caviar and mashed potatoes. We limit the expense with a fine three-course menu for €99, and save room for the well-worked desserts (pavlova red fruits sorbet basil, royal of gianduja praliné hazelnut). A classic connoisseur's cellar, with great wines from all regions.
