Prestige Restaurant It's the family! United, focused on the goal of pleasing others by pleasing ourselves, by doing what we love, with a team that helps you win. That's what it's like in this house of happiness, hidden from the crowds yet just ten minutes from the hustle and bustle of the coast. This gourmet oasis has it all, and the two Ibarboure brothers, Xabi in the kitchen and Patrice in the patisserie, make the region sing like no one else around them. Legitimacy, loyalty to the terroir, and family history - these are the legacies they make good use of. With a lovely recital, which begins with a firework display of appetizers (a little too many, in fact), the first vegetal plates, puffed zucchini flower with langoustine in Nantua sauce, generous raviole of Landes foie gras, fricassee of chanterelles, light mushroom emulsion, Perigueux sauce.... Big appetites follow with local pollack, iodized condiment, spinach with seaweed butter, sumac and pastis jus, and three-piece farm squab (supreme, fillet, leg stuffed with giblets...). The feast ends on a high note with Mendionde strawberries, fennel seed shortbread, a light orange blossom ganache and pure-origin hot-cold chocolate, Piedmont hazelnut praline, Tahitian vanilla ice cream. This teamwork takes shape at every moment, with a motivated, active and competent service. A beautiful, classic cellar with 600 references.
