What best defines a great house is its ability to make the experience simple and accessible. Anyone who thinks they can enter the big leagues by coating it in pomp and solemnity is mistaken. This is what makes the house of the Ibarboure brothers so endearing to its regulars and one-night visitors alike: Soline's natural welcome, which puts a smile on everyone's face as soon as they cross the threshold, the dedication of the team, and Xabi's cuisine. With a reduced menu: four courses, two desserts, providing two menus in four or six courses, he makes it accessible in every sense of the word, since the first at €117 makes it one of the least expensive for a four-course meal. Local appetizers set the scene for this pure Basque residence in the Biarritz countryside, before crisp green asparagus with vegetable vinaigrette and pineapple sage ice cream. A veil of wild garlic covers the foie gras and morels in a Périgueux jus, before the magnificent sole from Saint-Jean de Luz, extracted from large 800g pieces, on a carpet of peas and rose geranium, pushed by a dash of wasabi, a beautiful dish that confirms the house's desire to produce clear, unpretentious dishes. In the same spirit, brother Patrice enters the scene with his remarkably composed and technically perfect desserts, such as the composition on rhubarb, all freshness and restrained acidity, perfumed with ginger, a subtle melilot and rhubarb ice cream, gourmet brioche. Extensive cellar without being huge, well-stocked with wines from Iruléguy, Madiran and Spain. The beautiful classic labels of the great regions are there, and the young sommelier, Alice Abgrall, who has only recently arrived, is already showing herself to be very comfortable and helpful.
