Gault&Millau's review 2025

One of the finest addresses on the coast, set on a cliff overlooking the ocean with a breathtaking view of the waves. Housed in a typical Basque mansion, the hotel, a member of the Collectionneurs, features 41 timelessly luxurious rooms and suites, most with terraces opening onto the palm-tree-lined grounds. A paradise for sports enthusiasts, the hotel boasts an infinity pool, a tennis court and the Chantaco golf course just a stone's throw away, not to mention yoga, paddle boarding, surfing and sea fishing sessions organized by the hotel. In the kitchen, chef Bastien Soumoulou offers a remarkable reinterpretation of local gastronomy, with a particular focus on organic produce and short supply chains. And the highlight is our favorite hideaway, the "Elaïa" lodge ("swallow" in Basque), where you can admire the ocean during musical sunsets, sipping a house cocktail, such as this Bloody Mary delicately spiced with Espelette chilli pepper...
