Gault&Millau's review 2026

In Saint-Jean-de-Luz, in the Nouvelle-Aquitaine region of France, this former motel facing the Atlantic had several lives before finding its true raison d'être. Opened in 2009 and fully modernized in 2017, the establishment owes its success today to one man: Bastien Soumoulou, a chef in his thirties who worked at Michel Guérard's Prés d'Eugénie and now heads the Ilura restaurant. His cuisine stands out for its rare ability to combine generosity and refinement without ever sacrificing one for the other - seasonal, healthy, rigorously rooted in the Basque and Landes terroir. Soumoulou and his team use short circuits, market-garden produce, farmhouse products and freshly caught fish to create combinations that are as surprising as they are convincing. Foie gras des Landes with nori seaweed and mushroom-black garlic condiment, Pyrenean lamb with honey-confit turnips, roast lean with cockles and almond milk, cheeses matured by Beñat Moity: an eco-responsible cuisine that has nothing moralizing about it; it seduces first and foremost by its flavors. The 4-star hotel boasts 41 warmly-colored rooms - with Basque red as their banner - facing the ocean, complemented by a residence of 44 apartments (25 to 90 m²) with two infinity pools, the Chantaco golf course just a stone's throw away and a tennis court. All set in a 3-hectare park, a fifteen-minute walk from the beach and town center. Member of the Teritoria community.
